Love Treats
Love is in the air and here is a fantastic and indulgent treat for your loved one, and by the way your first loved one should be yourself. So for that little bit of self love pinch the first one, here is the recipe:
8 juicy dates or soft figs
1/2 cup almond (or other nut) butter
2 tablespoons ( I sometimes use 1 depending how rich you want it) ghee or melted coconut oil
1 tablespoon rose water
1/2 teaspoon each cinnamon and cardamon
pinch of ground ginger and salt
4 cups rolled oats
maple syrup or runny honey to taste (up to 1/4 cup)
Handful of rose petals and dessicated coconut to roll in.
Blitz the dates or figs in a food processor until well broken up. add the remaining ingredients (except the oats) and blitz together. Finally add the oats and process until it all starts to come together, too dry add some more rose water, too wet add some more oats until the consistency will come together well to form a ball. Roll into bite size balls and roll around in the rose petals and coconut, put into a container in the fridge to harden a little.
I use dates when I want more sweetness, but for valentines I would probably use figs as they are more exotic in taste.
