Green Soup (for the soul)

This is one of my favourite quick and easy, yet really nourishing and satisfying soups and I alter the ingredients to suit the season.

For the Autumn we want something warming, nourishing and filling, but we can choose lighter ingredients for spring and summer. I have been doing an Ayurvedic cleanse changing with the seasons, and this green soup is going to bring me the same goodness and minerals as a juice, only who wants a cold juice right now?

Green foods have vital nutrients such as magnesium, nitrates, folates, vitamin k so great for your heart and digestive system. They can be quite bitter (leafy ones especially) so I have added some peas for sweetness and some coconut milk.

I just threw everything in a slow cooker, but equally quick to make when you want something quick and satisfying, the recipe is below and I will also give a link to my you tube videos where I talk you through the recipe.

Recipe (1-2 servings)

1 onion (red or white)chopped

1 large teaspoon oil - ghee or coconut

1 handful of Swiss chard (or spinach) chopped

1 handful kale (any kind) chopped

1 handful frozen peas

2-3 cups water (or stock)

1/2 Tin coconut milk

Spice blend (1/2 teaspoon fennel, coriander, cumin, ginger (ground or fresh grated),1 teaspoon turmeric and grinding of black pepper)If you have whole fennel, coriander and cumin seeds its great to toast slightly and then grind together.

Saute the onion in the oil until translucent, add the peas and greens, stir for a second then add the water and coconut. Sprinkle the spices in and stir, put a lid on and simmer for around 15 minutes and it is ready to blend and serve. It really is as simple as that - tasty and good for the soul.
