Mini retreat recipes
On saturday I made two different treats for the restorative yoga event. I was asked for the recipes - so here they are:
Energy Balls
2 tablespoons ground oats (or ground almonds)
2 dates
1 heaped teaspoon cacao powder
1 level teaspoon banana powder ( or half a banana mashed)
1 level teaspoon espresso coffee granules
1 tablespoon almond butter (or peanut butter)
method
First of all soak the dates by covering them with boiled water in a cup for around 10 minutes.
Add all the other dry ingredients in a bowl and mix together
Blend the dates and water together (removing any stone first) and add along with the butter to the dry ingredients
you may need to add a little more water if too dry, or oats/almonds if too wet.
Roll into balls and put into the fridge to store - but not for long!
These energy balls are ideal when you need an energy boost, low in added sugar and processed ingredients.
Yogic Cookies
Ground almonds 200g
Ground Flaxseeds 2 tblsp
Coconut sugar (or brown sugar) 3 tblsp
Olive oil 3 tblsp
Pecan nuts (or other nut) 50g
Dark chocolate chips (or broken bar) 80g
Cinnamon/ginger/cardamon ground a pinch or half teaspoon of each
Water 4 tblsp
Method
Heat oven to 180/160 gas 4
In a bowl mix the ground flaxseeds and water and set aside for 10 minutes or so.
Combine the olive oil and sugar and add to the flaxseeds and stir.
Add in the ground almonds, spices, chocolate and pecans to combine all together.
Roll cookie dough with you hands into 12 balls (you may need to wet your hands to bring it together), place on your baking tray (I use greaseproof paper on the tray). Flatten down with your palm (or a fork).
Cook for 10-15 minutes depending on size (I turn them over after around 8 minutes to make sure they are cooked through).
A lovely alternative to highly processed cookies, with good fats, fibre and you can reduce the amount of sugar easily too. Adjust the spices to how strong you like them.
